A simple pantry+ pasta that makes it easy to clean out the fridge and avoid a trip to the grocery store.

I'm calling this dish a "pantry+ pasta". It's the perfect way to avoid the grocery store by using some of your canned products while also using up that little bit of fresh produce you have left over. Either stick to this recipe or use it as a guide and add whatever leftover veg you have available. I love using this recipe when I have leftover asparagus, broccolini or mushrooms to add!
Clean out the fridge with this tasty meal for dinner
I'm using frozen sustainably harvested shrimp that I sourced from my local grocery store and a few pantry staples that I always have on hand. Canned artichokes, green olives and sun-dried tomatoes give this pasta the Mediterranean flare we love, while a handful of cherry tomatoes, lemon and oil add a level of freshness that take it up a notch from your everyday pantry pasta. Add a sprinkle of vegan feta and dinner is served!
Mediterranean shrimp pasta
(serves 2)
Ingredients
8-10 pieces sustainably sourced thawed, cooked shrimp
A handful of cherry tomatoes
3-4 canned artichoke hearts
A handful of green olives
3-4 sun-dried tomatoes
1 tbsp garlic
the juice of 1/2 a lemon
4 tbsp olive oil
Vegan feta cheese for sprinkling
4-6 oz. cooked thin spaghetti
method
Chop your veggies. Cut the tomatoes into halves, the artichokes into quarters, the olives into halves and the sun-dried tomatoes into small bite size pieces.
In a hot pan, drizzle 4 tbsp of olive oil. Add the shrimp, tomatoes, artichokes, sun-dried tomatoes, olives and garlic. Sauté on medium heat until the tomatoes have softened and dispersed some juice. You can speed up this process by smashing the tomatoes in the pan.
Turn down the heat to low and add the juice of 1/2 a lemon. Gently toss the cooked pasta in the pan and plate! Finish it off with a sprinkle of vegan feta and enjoy!
