SHAVED BRUSSEL SPROUT AND POMEGRANATE SALAD

The best make-ahead dish for potlucks this season.

I'm always searching for a good salad that can withstand a holiday party into the evening. Delicate greens often go bad before anyone can touch them and kale has been done just toooo many times, so I turned to brussel sprouts! They’re hearty, crispy and make a great festive salad that can sit on the grazing table with dressing on it long enough for everyone to get a taste.

Crispy and light makes for the perfect potluck dish

This shaved brussel sprout salad brings a festive touch to any table with an array of ruby red pomegranate seeds and toasted almonds. It’s then tossed in an avocado champagne vinaigrette and sprinkled with vegan parmasan. You can serve this salad immediately or set it the fridge for a few hours to let the flavors come together before you are ready to dish it up!


Shaved brussel sprouts and pomegranate salad


Ingredients

  • 6 cups brussel sprouts shaved

  • 1/2 cup pom seeds

  • 1/2 cup chopped almonds

  • 1/3 cup vegan parmesan

Dressing

  • 1 very ripe avocado

  • 3 tbsp champagne vinegar

  • 1 tbsp agave

  • 1 tbsp dijon

  • 4 tbsp olive oil

  • salt and pepper to taste

  • water for consistency


Method

  1. Spread the chopped almonds into a parchment paper lined pan, place in the oven on high broil for 7-10 minutes or until golden brown.

  2. Chop the hard knob off of the brussel sprouts and discard. Cut into shavings and place in a large mixing bowl.

  3. Add the pomegranate seeds to the brussel sprouts.

  4. In a blender, combine the dressing ingredients. Blend until smooth and slowly add water or extra oil until the dressing is at your desired consistency.

  5. Pour the dressing over the brussel sprouts and mix. Place the salad into a serving dish and top with the chopped almonds, Parmesan and additional pomegranate seeds if desired. Store in the fridge until ready to serve
