vegan apple pie bites

(Makes 18 bites)

Ingredients

filling

  • 1-2 large granny smith apples

  • 1/4 cup vegan butter

  • 2 tbsp cane sugar

  • 2 tsp cinnamon

  • 1 tsp nutmeg

cream cheese frosting

  • 1/2 cup vegan cream cheese

  • 1/4 cup softened vegan butter

  • 1 tbsp vanilla extract

  • Juice of 1/2 a lemon

  • 2-3 cups powdered sugar

additional items

  • vegan wonton wrappers

  • pastry bag

  • mini muffin tin

method

  1. Preheat the oven to 350 F

  2. In a medium mixing bowl, combine all of the cream cheese frosting ingredients except the powdered sugar. Cream the mixture and slowly ad the powdered sugar until you reach the level of sweetness you would like, about 2-3 cups. Place the frosting mixture into a pastry bag and freeze for 1 hour so the frosting can thicken.

  3. Peel and chop the apples into small cubes. Place them in a pan over medium heat along with the rest of the filling ingredients. Cook down the apples until they have have become very soft and the sauce thickens. Turn off the heat and let the mixture cool completely.

  4. Gather 18 wonton wraps and lightly press them into a non-stick or greased mini muffin tin, creating a little bowl. Place them into the oven for 8-10 minutes or until the wonton cups have very lightly browned and crisped. Keep a sharp eye on these while they are baking as they can brown very quickly depending on your oven.

  5. Remove the wonton cups from the muffin tin and let cool completely. Once you are ready to assemble, take the frosting out of the freezer and let soften while you place the cups on a serving tray and gently spoon a small amount of apple filling into each one. Cut the tip off the frosting bag and swirl a bit of the frosting on top of each apple cup, filling roughly half of the top of the cup. Keep refrigerated until ready to serve or place the freezer for up to an hour before serving.
