Ive been dying for a flavorful seafood soup this season. There's a little chill in the air and this chipotle shrimp and veggie soup is the cozy answer you're looking for! It's bright, flavorful and has a tiny bit of spice to round it out and fill you up this season!
A hint of spice to warm you up this winter
This chipotle shrimp soup starts off with sautéing aromatics and jumbo shrimp until fragrant. We are then filling the pot with carrots, diced tomatoes and vegetable broth to let it simmer down before we add a dash of chipotle, lemon and herbs that will really finish the dish off and create a bright and flavorful soup. If you are looking for a vegan version of this soup, omitting the shrimp and adding an array of other root vegetables and a bit of kale makes a hearty vegetable and herb soup that you can easily make ahead and serve any day of the week.
CHIPOTLE SHRIMP AND VEGGIE SOUP
Ingredients
12 oz frozen shrimp, cooked or raw
2-3 peeled and chopped carrots
1/4 large sweet yellow onion
3-4 garlic cloves, minced
2 tbsp chipotle sauce
2 tbsp tomato paste
1 can diced tomatoes
3 cups veggie broth
1 bunch of Italian parsley
1 bunch of fresh dill
METHOD
In a large pot, combine a drizzle of oil, chopped onions and garlic over medium heat. Stir, add the frozen shrimp and sauté until the onions are translucent and garlic is fragrant. Once the shrimp has thawed, remove any shells and discard them.
Add the tomato paste, diced tomatoes, veggie broth, chipotle and carrots to the pot.
Let simmer until the carrots have softened and the broth has thickened slightly.
Lastly, add the chopped parsley, dill and the juice of 1/2 a lemon. Stir to combine.
Serve with a side of garlic crostinis or add a sprinkling of parsley and a few sourdough croutons for a finishing touch.
