Creamy herbed tuna and orzo baked in a sweet acorn squash. Nothing says fall more than the way this dinner smells !

Squash Is a fall flavor I look forward to all year long. Its perfect in soups, tacos, curries and of course, casserole's! Growing up, I always loved when my mom would make tuna noodle casserole. So today, we're making a modern twist on the classic by substituting vegan ingredients for the dairy that's in the original recipe and using sustainably caught tuna. Ive also made this one dinner party ready by adding loads of warm flavors your guests will love on top of a beautiful presentation!
A childhood classic gone seagan
Although the word casserole might be the best way to describe this dish, its anything but! A creamy almond sauce with fresh garden peas, sustainable tuna, sage and orzo come together inside a broiled acorn squash. Its covered with crispy breadcrumbs and brings a grown-up modern take to this childhood classic.
Tuna casserole stuffed squash
ingredients
1 acorn squash, split and seeded
1/2 cup cooked orzo
1/2 cup canned or fresh mushrooms
1/2 cup garden peas
1/2 cup vegan Parmesan plus 1/4 cup for topping
4 tbsp cashew or almond base
1 can tuna
panko breadcrumbs
oil or drizzling
method
Preheat the oven to 400 F
Split and seed 1-2 acorn squash.
Place the squash cut side up onto a baking tray and drizzle with oil. Season with salt and pepper and place in oven for 30 minutes or until the squash is fork tender.
Dice the yellow onion, sage and thyme.
Combine the orzo, tuna, onions, sage, thyme, garden peas, mushrooms, vegan parmesan, nut base.
Stuff the squash halves with the mixture and place any leftover stuffing in an oven safe dish on the same pan.
Mix the panko breadcrumbs, 1/4 cup of parmesan and a drizzle of oil. Top the squash halves with the mixture.
Broil on low for 20 minutes or until golden brown. Serve immediately.
