CRISPY SNAPPER SPRING ROLL BITES

These spring roll bites are fried to perfection and stuffed with flavor.

You can never go wrong with fried goodies and these crispy snapper spring roll bites do not disappoint. They are extremely easy to whip up and share with a crowd or get the crew together for a build-your-own dinner night. You can pre-chop all of your ingredients and lay them out for everyone to prepare their own bites and add their favorite flavors! I love to make this meal after a long day on the water and everyone is ready for a fast and filling meal to tuck in to.


Crispy snapper spring roll bites


ingredients


  • 1 large or 2 small fillets of snapper or mildly flavored fish

  • About 2 carrots, julienne cut

  • 1/2 cup shredded red or purple cabbage

  • 1 jalapeño, sliced into rounds

  • 1 handful cilantro, chopped

  • 12-15 small spring roll wrappers

  • Oil for frying

Marinade for fish

  • Drizzle of sesame oil

  • 1/4 cup soy sauce

  • 1 tsp grated fresh ginger

  • 1 tsp grated garlic

Dressing and dipping sauce

  • 1/4 cup soy sauce

  • 1/4 cup hoisin sauce

  • 1 tsp white sesame seeds

method


  1. Whisk together the marinade ingredients in a covered container and place the fish fillet in the marinade. Shake and place in the refrigerator for up to 1 hour.

  2. Once the fish has finished marinating- Heat a skillet on medium heat and place the fillet and the remaining marinade in the skillet, Sauté each side of the fish fillet for 3-5 minutes or until it is fully cooked through. Let cool.

  3. Cut the fish into equal bites size pieces, about 1/2 in squares, and prepare the rest of the ingredients and dipping sauce for assembly. One at a time, Dip a spring roll wrapper into a shallow dish of water and let soften. Lay out on a flat surface and brush a small amount of dipping sauce into the center of the wrapper. Start to layer up the bib lettuce, fish, carrots, cabbage, cilantro and jalapeño on top of the dipping sauce. Keep the portions small so you can wrap the spring roll wrapper like a tiny package. Once the wrapper is sealed, lay another softened wrapper down and wrap the package a second time. This will insure that the spring roll bite does not fall apart during the frying process.

  4. Its time to fry! Heat a fair amount of neutrally flavored oil in a pan and gently place each spring roll bite into the oil. Fry for 2-3 minutes on each side or until the outside is crispy and golden. Tip: Make sure the oil is hot enough to fry the rice paper quickly. If it is not, this may result in a soggy spring roll bite.

  5. Serve over a bed of sautéed bok choy or on their own with a dipping sauce in the side.
