ARTICHOKE DIP BITES

A lighter (and vegan!) take on the classic artichoke dip we all know and love!

Ahhh, artichoke dip. Its sooo tasty! It's also one of the first things I made into a vegan recipe when I made the switch. Even though I love a solid vegan artichoke dip, I was looking for something a little lighter. Something you can throw on the table and people can pick at as they please without spoiling their dinner, because lets be honest. Once the artichoke dip comes out, you know its leaving the table as an empty bowl and bellies will be full. These artichoke bites give you all the flavor of our favorite dip in one bite that will leave you satisfied and ready for what's next!

Your favorite dip all in one bite

These tasty little morsels start with artichoke hearts split in half and laid out on a baking sheet. They are then topped with a creamy mayo dressing and vegan parmesan cheese. Sprinkle with your favorite bread crumbs and pop them in the air-frier for a quick snack for the crew!


Artichoke dip bites


Ingredients


  • 1 can artichoke hearts

  • 1/2 cup vegan mayo

  • 2 tbs lime juice

  • 1 tsp dijon mustard

  • Dash of salt and pepper

  • 1/3 cup vegan parmesan cheese

  • Panko bread crumbs for topping

method


  1. Preheat the oven on the air fry setting for 400 degrees F.

  2. Cut the artichoke heart in half, lengthwise and arrange on a greased baking tray, cut side up.

  3. In a bowl, whisk together the mayo, lime juice, mustard, and salt/pepper

  4. Place a spoonful of the mayo dressing on top of each artichoke half and top with a pinch of parmesan cheese. Sprinkle each piece with a layer of breadcrumbs.

  5. Place in the oven for 10 minutes or until the breadcrumb are golden and the cheese is bubbling.

  6. Serve with a side of pita chips.
