This fun halloween dinner idea is perfect for all ages and bound to get you in the spooky season mood!

Halloween is just around the corner, my favorite holiday! Spooky season often consists of lots of Halloween movie nights, caramel popcorn and apple cider. This year, I wanted to try something a little extra spooky for dinner. These Jack Skellington salmon rice balls are easy enough that the whole family can get involved and have fun eating this healthy Halloween dinner. oh yeah, and they're delicious! Whether you theme them or not, you'll be making these on the weekly!
Halloween dinner for the whole family
These rice balls are filled with a savory salmon, vegan mayo and a smokey chili crisp filling. Don't worry, they're not spicy! Although, they would be fantastic if you wanted to add a little spice on your own. To go along with them and continue with the halloween color scheme, we're making a simple blanched carrot salad and air frying (or bake) thin eggplant slices with a coconut hoisin sauce that does not disappoint. In fact , I may have like this eggplant more than the rice balls themselves!
JACK SKELLINGTON SALMON RICE BALLS WITH COCONUT GLAZED EGGPLANT AND GARLICKY CARROTS
Ingredients
(makes about 5 balls)
1 1/2 cup sushi rice
Plastic wrap
1 sheet of nori
RICE BALL FILLING
1 can salmon in water, drained. I use MSC certified to make sure its sustainable.
1/4 avocado, cubed
1 tbsp chili crisp (or your favorite mixed seasoning, like old bay)
1 tbsp furikake( Japanese all purpose seasons, I like Trader Joes brand)
1/3 cup vegan mayo
COCONUT GLAZED EGGPLANT
1 eggplant, cut lengthwise in 1/4 inch sheets
about 1/2 cup each or equal mixture of canned coconut cream(or milk) and hoisin sauce for basting.
GARLICKY CARROTS
2 large carrots, peeled into thin strips
1 tsp garlic paste or 2 cloves, minced
1 tbsp seseme oil
1 tsp seseme seeds
method
Cook the sushi rice as directed and let come down to room temp. before handling.
While the rice is cooking, Put the oven on 400 degrees F on air fry mode or bake.
Brush both side of the eggplant with the coconut mixture and place on a baking tray in a single layer. Place in the oven for 15 minutes or until the eggplant has softened. If you have any left over mixture, you can brush the eggplant as they are in the oven.
Once the eggplant is in the oven, peel your carrots into strips and place in a bowl. Pour boiled water over the top and submerge the carrots. let sit for 3-5 minutes and drain.
Add the garlic, seseme oil and sesame seeds to the bowl. mix and place in the refrigerator until you are ready to plate.
RICE BALLS
place a sheet of plastic wrap over your palm( you can also just use wet hands)
Scoop a golfball size of sushi rice into your palm and create a dent in the center.
without over filling, scoop a small amount of salmon filling into the dent. Cover with an extra spoonful of sushi rice and gently close up the plastic wrap around it to create a ball. Press the rice into a tight ball and remove the plastic wrap. Repeat.
Once you are ready to decorate our Jack Skellington balls, take a sheet of nori and fold it in three. You will cut out 2 sets of eye socket shapes, 2 sets of small nose holes, 2 smiles and 20-25 tiny strips to go across the smile line. When finished, you should end up with enough nori pieces to decorate all of your balls, plus extra. Ive found that the best way to cut out my shapes is to find a picture online that matches the size of your balls and use that as a guide. Either print it out and cut out the shapes to place on your nori sheets and cut around, or eyeball it. In my experience, eyeballing doesn't work nearly as well.
Lightly wet there side of the ball you will be decorating and with a tweezer, start to assemble the face. If you find the nori is not sticking well, try wetting it gently once it is in place.
Once everything is decorated, its time to plate! lay out the eggplant on the border of a serving tray and place the carrots in the center to create a bed for your skellington balls. Place the balls on top the of the carrots and you're ready to eat! serve with a side of spicy mayo or soy sauce for dipping if you'd like.
