CHIPOTLE FISH TACO DIP

Whether its game day or you're just hanging with your mates, this chipotle fish taco dip will be the talk of the table. It has the perfect taco flavor in each bite and trust me when I say your friends will be asking for this one when next Sunday rolls around!

Forget the olives, yellow cheese and shredded lettuce. This chipotle fish taco dip is taking over and I'm never going back! It s my go-to game day appetizer to whip up while every one watches the game or when I'm looking for a shareable dish to bring to a summer pot luck or new years party. It works all year round and it is always a hit!

A little taco bowl in every bite

This seagan taco dip is layered up with all the classic flavors. Refried beans, blackened flaked fish, tomatoes, shredded cabbage, red onion, sharp vegan feta and a creamy homemade chipotle sour cream sauce. Its a little spicy and piled up with flavor. An easy way to bring a beautiful dish to the party that takes no time at all and can easily be prepared well ahead of time. This recipe is extremely easy to make into a plant based dish as everything besides the fish is vegan! Simply omit the fish and you'll have a show stopping vegan taco dip that everyone will love!


CHIPOTLE FISH TACO DIP


Ingredients

(Serves 6-8 people)

  • 2 fillets of blackened, white fish

  • 1 can vegan refried beans (I like trader joes brand)

  • 2/3 cup diced tomatoes

  • 1/2 red onion, diced

  • 2/3 cup vegan feta crumbles

  • 2 cups finely shredded cabbage

  • 1/2 jalepeno, sliced into rings

  • 1 lime, cut into wedges

  • Optional: cilantro for garnish

Chipotle sauce

  • 1/2 cup vegan sour cream

  • 1/2 cup vegan mayo

  • 4 tbsp chipotle sauce (or more, for additional spice) - An authentic chipotle sauce is important in this recipe, I like to use a canned chipotle sauce from the brand, La costeña.

  • Splash of lime juice

  • salt to taste

method


  1. Blacken the fish, prep the veggies and whisk together the creamy chipotle sauce ingredients. Grab yourself a medium sized serving dish and lets get to layering!

  2. Starting with the refried beans, spread 1/4 of the can onto the bottom of the pan, all the way to the edges. Next, gently flake 1/2 of one fillet over over the refried beans. Then a generous drizzle of the chipotle sauce, 1/4 of the tomatoes, 1/4 of the onions, 1/4 of the cabbage and lastly, 1/4 or the cheese.

  3. Repeat these steps until you have run out of ingredients to layer.

  4. Garnish the dip with a bit of extra cheese or veggies. Top with a bit of extra chipotle sauce and lay the sliced jalapeños around the edge. Place the lime wedges on the side of the dish and place in the refrigerator until ready to serve.
