CUCUMBER NOODS WITH HERBED AVOCADO CREAM

Fresh, green and clean. A little like a salad, a little like a pasta. Everything you want in a fresh midday meal.

Being a seagan crew aboard Knot A Clue, we typically have plant based meals for breakfast, lunch and 2-3 nights a week for dinner. As often as possible, i'm making dishes that can stand alone as a plant based meal or be accompanied by the days fresh catch. Something as simple as cucumber noodles with this blended avocado cream is enough to satisfy your taste buds as a quick raw vegan lunch or perfectly pairs with smoked fish or chilled, flaked fillets for a cool dinner on a warm evening.

Cool cucumbers, sweet beets and tangy feta.

Cool cucumber noodles nestled under a creamy avocado based dressing that is bursting with flavor and little bit of heat. This dish is topped with pickled beets and tangy feta , one of my favorite combinations! Cashews give a little bit of crunch to finish off this nutritious vegan lunch.

Low waste tip: Experiment with your herbs. Try different combinations of what what you already have in the fridge and don't snip off the soft stems, blend them!


CUCUMBER NOODS WITH HERBED AVOCADO CREAM

(2 servings)


INGREDIENTS

  • 1-2 english cucumbers( free from wax and spiralized/shaved)

Dressing

  • 1 ripe avocado.

  • Handful of basil/cilantro/dill and any complimentary fresh herbs on hand

  • 1/2 lemon, juiced

  • 1-2 cloves garlic

  • 1/3 jalepeno

  • 1 tbsp cashew base( I use the brand, Joi)

  • 2-4 chives

  • Water or broth as needed( I like miso broth)

  • Vegan feta/ pickled beets for topping


METHOD


  1. Wash and spiralize( or peel) an english cucumber into noodle-like strands. I prefer to peel mine as I find it faster.

  2. In a blender or food processor, combine all dressing ingredients and blend.

  3. Slowly add water or broth by the tbsp to the blender until you reach your desired dressing consistency.

  4. Toss cucumber noodles in dressing and top with crumbled vegan feta and sliced pickled beets.
