RICE PAPER BITES: THREE WAYS

Three variations of my favorite style of marinades turned into bite size appetizers with a crunch. Freshly cubed mackerel is marinated in pad thai, poke, sweet chili oil sauces and accompanied by rice noodles, veggies and a whole crew of yummy toppings before placed in an array of bite size edible rice paper shells.

Why have one when you can have them all?!? These rice paper bites are a fun way to dish up all your favorite flavors into one appetizer board that will please everyones taste buds. They're easy to make, fun to eat and a great way to introduce your friends and family to raw dishes. Ive used familiar flavors and textures to create tasty little bite size bowls that you cans serve at your next get-together or whip up on your way back to the dock. Prep your chopped veggies, marinades and rice paper shells ahead if you're short on time and assemble in less than 10 minutes for an easy app or size up on portions and add a bit of rice for a filling lunch!

Toss out the charcuterie board and serve this instead

It all starts with frying up an array of rice paper into crispy little shells to display each section and their own unique flavors and texture. First its the poke bites. Freshly cubed mackerel is tossed in a tamari and soy sauce marinade and spooned over a bed of rice noodles, fresh vegetables, seaweed salad and topped with furikake seasoning and a drizzle of spicy mayo for a perfect one - bite poke fix. Then we move on to a pad thai inspired bite with your favorite peanut sauce as a marinade, sweet peppers, creamy avocado and crushed peanuts atop a bed of rice noodles. Last but not least, and my favorite of the bites, a sweet chili oil bowl. Fresh cucumber and basil are topped with a spoonful of fresh mackerel marinated in tangy sweet and sour sauce and topped with crispy chili oil that adds a smokey chili flavor you cant miss.

Tips & Tricks

Rice paper not puffing up in the fry pan? Use hotter oil.

Things falling apart? Be sure that your ingredients are free of any excess liquid or moisture and serve immediately after assembly.

Picking your fish: Is fresh mackerel not available to you? Try using a fresh fillet of tuna, mahi, wahoo, snapper, hogfish, lion fish or any of your favorite species you enjoy raw. Looking for a cooked option? Try lobster or crab.

Make it vegan? Swap out the fish with shredded jackfruit, chopped hearts of palm, tofu or extra of your favorite veggies and marinate as directed.




RICE PAPER BITES: THREE WAYS

(Makes 15 bites)


INGREDIENTS

  • 1- 2 fresh raw mackerel fillets( click here for others species options and fish tips)

  • 1/2 avocado, cubed

  • 2 small persian cucumbers, cubed

  • 1/3 cup shredded carrots

  • handful of chives

  • 2-3 small sweet peppers

  • furikake seasoning (sub for shredded nori and sesame seeds)

  • basil

  • chili crisp oil

  • soy

  • tamari

  • sweet and sour sauce

  • vegan mayo

  • crushed peanuts

  • sriracha

  • hydrated seaweed salad


Poke bites (Makes 5 bite size bowls)


MARINADE

  • 1/4 cup soy sayce

  • 1/4 cup tamari

  • 1 tsp sesame seeds

FIXINGS

  • Rice noodles

  • Avocado

  • Cucumber

  • Seaweed salad

  • Furikake

  • Drizzle with spicy mayo (equal parts vegan mayo and sriracha)


Pad thai bites (makes 5 bite size bowls)


MARINADE

  • 1/4 cup soy sauce

  • 1/4 peanut sauce

  • Sriracha to taste

FIXINGS

  • Rice noodles

  • Shredded carrot

  • Chives

  • Sweet peppers

  • Avocado

  • Top with crushed peanuts


Sweet chili oil bites ( makes 5 bite size bowls)


MARINADE

  • 1/4 cup sweet and sour sauce

  • 1/4 cup soy sauce

FIXINGS

  • Cucumber

  • Sesame seeds

  • Basil

  • Top with spoonful of chili oil



METHOD


  1. Chop all veggies into small bite size pieces. Prepare the rice noodles and seaweed salad by soaking in warm water or miso broth until tender. Drain the rice noodles and seaweed salad of any liquid, gently pat dry and set aside for assembly.

  2. Cube the fish fillets into small pieces and separate into 3 bowls. Add one marinade to each bowl, stir and let sit while you prepare the rest of the ingredients or place in the fridge for up to an hour.

  3. Cut 4 rice paper wrappers into 4 sections and flash fry each piece separately in hot oil. Using a tong to push down in the center as they fry to create a small bowl. Gently place them on a paper towel lined plate to soak up any excess oil and arrange onto your serving platter.

  4. Gather all of your ingredients and start to assemble the fixings, in order, according to each type of rice paper bite that is listed above. The rice paper will get fragile when wet so be sure that there is not any excess water or marinade on any of the fixings or fish, as they may fall apart if the bottom gets soggy.
