The fastest way to cook up fresh lobster for dinner!

One-pot recipes will forever hold a place in my heart. There is truly nothing better then a fantastic meal that yields virtually zero clean up. Ive always steamed my lobster tails separately or put them in the oven if I was making any kind of lobster dish, because it just what you do , right?? Until the day came that I just threw them into the pasta water because I truly didn't have the energy to do anything else. What came of it was a hack that I couldn't believe I had not done sooner! They cooked up perfectly in sync with the pasta and saved me a whole lot of time, effort and mess.
The best time saver
This penne may be fast but its definitely not lacking in the flavor department. Sweet lobster and zucchini are nestled into a freshly made sauce of tomatoes and cashew base before being topped with sharp vegan mozzarella and freshly chopped basil. Its the perfect week night or date night meal that can be whipped up in a hurry so you can focus on what really matters!
one-pot lobster penne
(2 -3 servings)
Ingredients
2 lobster tails, cleaned and split
½ cup cherry tomatoes, diced in half
1/2 white onion, chopped
1/2 zucchini, cut it round
2 garlic cloves, minced
2 tbsp Joi cashew base ( or homemade nut base)
3 tbsp tomato paste
olive oil for sautéing
1 1/2 cups dry penne pasta
vegan mozzarella and basil for topping.
method
Bring roughly 4 cups of salted water to a boil in a large sauce pan. Once the water has come to a roiling boil, add the pasta, zucchini rounds and lobster tails. Do not use too much water! you want to spread the pasta evenly on the bottom of the pan and the lobster tails should rest slightly above the water line. This will steam the lobster tails and cook the zucchini at the same time as the pasta. Watch the video HERE
Once the pasta has become al dente and the lobster tail turns bright red, remove everything from the pan and give the ingredients a good rinse and drain.
Place the same pan back over the stove on medium heat and add a drizzle of oil. Once sizzling, add the cherry tomatoes, onions, garlic and salt and pepper too taste. Sauté until the onions become translucent and the cherry tomatoes have softened.
Deglaze the pan with a tbsp or two of water and add the tomato paste and nut base. Add small amounts of water and whisk until a creamy sauce forms. Turn off the heat.
Chop the lobster tails into bite size pieces and the zucchini rounds into quarters. Add the pasta, zucchini and lobster back into the pan and stir.
Serve with a sprinkling of vegan mozzarella and chopped basil.
