THIS is the kind of breakfast that gets me extra excited to get out of bed in the morning. Anytime I have freshly smoked fish in the fridge (which is as often as possible) you can guarantee this recipe will be on the table in the morning. Whether youre back from a fishing trip and looking for something new to do with your catch or interested in exploring options at your local grocery store- This recipe is always a winner to break out on sunday morning. I like to make this toast with a crusty baguette but you can use whatever your favorite toast may be. Bagels, sourdough or even melba toast are all great options. so... forget the lox and cream cheese and bring this to brunch instead. It will quickly take its place as your favorite item on the menu!
A not -so -average avocado toast
Toasty bread, creamy mashed avocado and chopped cherry tomatoes start off as the base of this recipe. Then we pile it high with freshly chopped arugula, dill and flaked smoked mackerel. A sprinkle of vegan mozzarella, squirt of lemon and voila! A smokey seagan brunch is served!
Tips & tricks
Don't have smoked fish? This recipe works great with left overs or cooked and cooled fillets. Simply sauté a fish fillet the evening before in your favorite seasonings and store in an air tight container. Let the fish sit at room temp in the morning while you prepare your ingredients or place in the microwave for 15 seconds to take the chill out before using.
SMOKED MACKEREL TOAST
(Makes 2 pieces)
INGREDIENTS
One 4 inch piece of baguette, cut in half lengthwise (Or any bread/bagel of your choice).
1/2 fillet of smoked mackerel or fish of your choice.
Vegan mozzarella for sprinkling
1/2 ripe avocado
Handful of cherry tomatoes. chopped
Handful of arugula
1 sprig of dill
1 lemon wedge
Everything bagel seasoning
METHOD
Toast your bread of choice and spread with 1/4 avocado each side.
Chop the dill and arugula and cut the cherry tomatoes in half.
Top the toast with all of your toppings, flake the mackerel on top and finish off the toast with a squirt of lemon and a sprinkle of everything bagel seasoning.
